Neapolitan Pound Cake

Pastel Napolitano
250 g harina de repostería
230 g Azúcar blanca
1 1/4 cdta Polvo para hornear
1/2 cdta Sal
250 g Mantequilla sin sal, temperatura ambiente
5 Huevos grandes
60 g Leche entera
1 cdta Extracto o pasta de Vainilla
60 g puré de fresa  o mermelada de fresa
60 g Chocolate semi amargo, derretido y a temperatura ambiente

1. Precalentar el horno a 325°F / 160°C . Engrasar y enharinar 3 moldes de 5 x 3.5 pulgadas / 12 x 9 centímetros.
2. En un recipiente mediano mezclar los huevos,  la vainilla y  la leche hasta combinar.
3. En el recipiente de una batidora eléctrica adaptada con el batidor plano, mezclar la harina, azúcar, polvo de hornear y la sal a velocidad baja, mezclar durante 30 segundos. Añadir la mantequilla y la mitad de la mezcla de los huevos y mezclar a baja velocidad durante unos 30 segundos, aumentar a velocidad media durante 1-1 / 2 minutos. Raspar los lados del recipiente.
4. Empezar a agregar a la mezcla de huevos / leche  restante en 2 partes; batir en medio durante 20 segundos después de cada adición.
5. Divide la mezcla en 3 partes iguales. Agrega la primera parte al molde directamente. Agregar el puré de fresa y unas gotitas de colorante rosa a la segunda parte de la masa y mezclar suavemente para incorporar. Después incorporar el chocolate derretido a la tercera parte de la mezcla y distribuir las mezclas en moldes diferentes.
6. Hornear 25-30 minutos o hasta que el un palillo de madera salga limpio cuando sea insertado en el centro.
7. Dejar reposar los moldes calientes 10 minutos sobre unas rejillas, luego retirar los pasteles de sus moldes y dejalos enfriar a temperatura ambiente.

Crema de Mantequilla de Vainilla
150 g de Claras de huevo (5 claras de huevo grandes. Importante pesarlas.)
200 g de Azúcar blanca refinada
250 g de Mantequilla ablandada
1/2 cucharadita de Pasta de Vainilla o Extracto

1. Mezclar las claras con el azúcar en un sartén pequeño y ponerlas a baño María unos minutos hasta disolver el azúcar y que al tacto apenas empiece a quemar o con la ayuda de un termómetro hasta llegar a 65ºC exactamente. Batir constantemente para no dejar cocer las claras de más. (Si ves grumos blancos es porque las claras se cocieron, para esto se debe pasar la mezcla por un tamiz pequeño).
2. Llevar la mezcla a la batidora adaptada con el globo de alambre por unos 10 minutos o hasta que el merengue suizo esté firme y el recipiente se sienta frío.
3. Una vez listo el merengue agregar la mantequilla poco a poco mientras se va batiendo hasta que queden totalmente incorporados los ingredientes. Batir unos 10 minutos a velocidad media-alta.
4. Agregar la vainilla y unas gotas de colorante ( Yo usé Electric Pink y Yellow de Americolor Gel Food coloring) batir hasta incorporar.

Chocolate Glazé
50 g Chocolate Amargo
30 g Mantequilla

1. En un pequeño sarten mezcla los ingredientes. Llévalo afuego lento hasta que ambos ingredientes estén totalmente disueltos. Déjalos enfriar y úsalos a 28 ° C / 80 ° F.  Si no tienes un termómetro, asegúrate que el Glazé está a temperatura ambiente y aún líquido, así no derretirá la Crema de Mantequilla y conseguiras un espesor más interesante.

Para ensamblar y decorar el pastel
1. Si los pasteles tienen un domo en la parte superior, nivelarlos usando un cuchillo de sierra o un nivelador de pasteles. (Es mejor usar pasteles congelados). Cortar cada pastel en 2 capas iguales y así obtener 6 capas de pastel iguales.
2. Poner la primera capa de pastel y usando una manga pastelera, esparcir una capa uniforme de crema de mantequilla sobre la superficie. Repetir el proceso cuantas veces sea necesario.
3. Esparcir crema de mantequilla por los bordes del pastel, remover el exceso con un alisador de pastelería y llevar al congelador 15 minutos.
4. Sacar el pastel del refrigerador y cubrirlo de nuevo con la crema restante.
5. Empezar a suavizar las superficies lentamente para obtener un pastel recto y con una capa pareja de crema de mantequilla. Alisar los bordes y la superficie del pastel. Congelar unos 15 minutos.
6. Hacer el goteo de glazé de chocolate sobre el pastel frío.
7. Hacer decoraciones con crema de mantequilla usando la boquilla Wilton 1M o la que te guste.
6. Decorar con chcoolates.
8. Disfruta.

Neapolitan Pound Cake
250 g Cake Flour
230 g Superfine sugar
1 1/4 tbsp Baking powder
1/2 tsp Salt
250 g Unsalted Butter
5 Large eggs
60 g Whole Milk
1 tsp Vanilla Bean paste or extract
60 g strawberry puree
60 g Bittersweet chocolate, melted and cooled
Few drops of Pink gel food Coloring

1. Preheat oven to 325°F / 160°C . Grease and flour three round 5 x 3.5 inch / 12 x 9 cm cake pans.
2.In a medium bowl, stir the eggs , milk and the vanilla  just until lightly combined.
3. In the bowl of a stand mixer fitted with the flat beater, mix the flour, sugar, baking powder, salt on low speed for 30 seconds. Add the butter and half of the eggs mixture and beat on low speed until the dry ingredients are moistened. Raise the speed to medium and beat for 1½ minutes. Scrape down the sides of the bowl.
4. Starting on medium-low speed, gradually add the remaining egg mixture to the batter in two batches, beating on medium speed for 20 seconds after each addition to incorporate the ingredients. Scrape down the sides of the bowl.
5. Divide mix in 3 equal batches. Pour first batch in a cake pan. Add strawberry puree and some drops of Pink gel food coloring to the second batch and mix to combine. Then, add melted chocolate to the third batch and mix too, pour them in different cake pans and smooth the surfaces evenly.
6. Bake 30-35 minutes or until a cake tester comes clean when inserted into the center. Be so careful to not over-bake.
7. Let cool on racks for 10 minutes before loosening the sides with a small metal spatula, and invert onto greased wire racks. Gently turn cakes back up, so the tops are up and cool.

Vanilla Swiss Meringue Buttercream
(Recipe from Linda Lomelino’s Blog)
150 g Egg whites (about 5 large egg whites. It is important to weight them)
250 g Butter, softened
200 g White sugar
1/2 tsp Vanilla bean paste or extract

1. Mix egg whites with sugar in a small saucepan and put it over a saucepan with simmering water a few minutes until sugar dissolves or using a thermometer until it gets 65°C exactly. Whisk constantly. Sift the mix through a small sieve if you get any lumps.
2. Using a stand mixer, whisk for about 10 minutes or until Swiss meringue is firm and bowl feels cool.
3. Once meringue is ready start adding soften butter slowly until it is fully incorporated. Whip 10 minutes at medium- hight speed.
4. Add some drops of food coloring and whisk to incorporate. I used yellow and Electric Pink of Americolor Gel Food coloring.

Chocolate Glaze
50 g Dark Chocolate
30 g Butter

1. In a small saucepan mix both ingredients. Bring pan over medium heat until both ingredients dissolves completely. Let cool and use it at 30 ° C / 86 ° F. If you don’t have a thermometer, make sure the glaze is at room temperature before using it, in this way the Chocolate will not melt buttercream and you will get a more interesting thickness.

To Assemble and decorate Cake

1. If cakes are domed on top, even out with a knife (Frozen cakes work better here). You can cut both cakes in half so you get 6 evenly layers.
2. Place the first layer on a cake board and using a pastry bag, pipe french buttercream around top, starting in the center of the cake. Repeat the process using all the cake layers.
3. Spread buttercream all over the cake and then remove any excess with the icing smoother and place it in the refrigerator about 15 minutes.
4. Bring the cake from the refrigerator and using the offset spatula cover with buttercream.
5. Begin covercoating cake and smoothing slowly. Be patient. Pay attention to get smooth surfaces and straight edges. Refrigerate once more.
6. Bring the cake from the refrigerator. Make sure chocolate glaze is at room temperature before using it, in this way the Chocolate will not melt frosting and you will get a more interesting thickness. Drip it over the edges of the cake.
7. Use the remaining  buttercream to pipe on the top of the cake. I used Wilton 1M tip.
8. Decorate with some Chocolates.
9. Enjoy.
