Moist Chocolate Cupcakes with Deluxe Chocolate Ganache Frosting

Cupcakes de Chocolate { 9 Cupcakes }
80 g Harina de todo uso
35 g Cacao en Polvo sin azúcar
130 g Azúcar blanca
1/2 cdta Polvo para hornear
1/4 cdta Bicarbonato de soda
1/4 cdta Sal
1 Huevo
40 g Aceite Vegetal
80 g Buttermilk  (Yo usé el jugo de medio limón más leche entera, se mezclan y se dejan en reposo por 10 minutos)
1/2 cdta Extracto de vainilla
70 g Agua hirviendo
50 g Chocolate pidado ( De leche o semi amargo )

1. Precalentar el horno a 350ºF / 175ºC.
2. Preparar el molde para muffins con las cápsulas o capacillos de cupcakes.
3. En un recipiente mediano, mezclar los ingredientes húmedos excepto el agua hirviendo ( buttermilk, aceite, huevo, vainilla) sólo hasta combinar. Reservar.
4. En el bowl de un batidor eléctrico adaptado con el batidor plano mezclar los ingredientes secos( harina, cocoa, azúcar, polvo de hornear, bicarbonato de soda y sal) a velocidad baja por algunos minutos.
5. Agregar en 3 partes la mezcla líquida, batiendo en velocidad media después de cada adición para incorporar los ingredientes. Raspar los lados del recipiente.
6. Agregar agua caliente y batir por 1 minuto hasta incorporar y que la mezcla se vea homogenea.
7. LLenar las cápsulas de los cupcakes 3/4 en total (Yo usé 50g de mezcla por cada cápsula de cupcake)
8. Poner un poco de chocolate picado encima de cada cupcake.
9. Hornear por 18 minutos o hasta que un palillo de madera insertado en el cupcake salga limpio.
10.  Sacar del horno y dejar enfriar sobre una rejilla.

Crema de Chocolate Deluxe
250 g Chocolate semi amargo picado
100 g Crema de leche
100 g Dulce de Leche o Arequipe ( O más crema )
1 cdta Extracto de Vainilla

1. En un sarten pequeño, mezclar la crema y el dulce de leche. Llevar a fuego lento, mezclando constantemente hasta que se disuelvan los ingredientes y estén a punto de hervir.
2. Agregar la mezcla caliente sobre el chocolate picado. Dejar reposar durante 1 minuto moviendo el recipiente con las manos.
3. Remover suavemente con una cuchara hasta que el chocolate se haya derredito completamente. Agregar la vainilla y mezclar hasta integrar.
4.  Dejar la crema reposar a temperatura ambiente un par de horas o hasta que tenga una consistencia más firme.
5. Decorar los cupcakes usando una manga pastelera con una boquilla adaptada. Yo usé Wilton 1M.

Chocolate Cupcakes { 9 Cupcakes }
80 g All-purpose flour
35 g Unsweetened Cocoa powder
130 g White sugar
1/2 tsp Baking powder
1/4 tsp Baking soda
1/4 tsp Salt
1 large egg
40 g Vegetable Oil
80 g Buttermilk  (I used the juice of half a lemon plus whole milk, mixed and relaxed for 10 minutes)
1/2 tsp Vanilla Extract
70 g Boiling water
50 g Milk or Bittersweet or Semi-sweet Chocolate crushed

1. Preheat oven to 350ºF / 175ºC.
2. Prepare a muffin pan with cupcake liners.
3. In a medium bowl, stir wet ingredients except boiling water ( buttermilk, egg, vanilla, oil) just until lightly combined. Set aside.
4. In the bowl of a stand mixer fitted with the flat beater mix dry ingredients flour, cocoa, sugar, baking powder, baking soda and salt on low speed for some minutes.
5. Starting on medium-low speed, gradually add the egg-buttermilk mixture in three parts, beating on medium speed for 20 seconds after each addition to incorporate the ingredients. Scrape down the sides of the bowl.
6. Add boiling water and beat 1 minute to incorporate.
7. Divide the mixture evenly into cupcake liners filling each one 3/4 of the way (use an ice cream scoop to transfer the batter into the cupcake liner or weigh 50g per cupcake liner).
8. Spread crushed Chocolate on top of each cupcake liner.
9. Bake for 18 minutes or until a toothpick inserted comes out clean.
10.  Let them rest in the pan for 5 minutes, take them out and let cool completely on a rack.

Deluxe Chocolate Ganache Frosting
250 g Bittersweet Chocolate coarsely chopped
100 g Cream / 35% minimum fat
100 g Dulce de Leche ( Or use more Cream instead)
1 tsp Vanilla Extract

1. In a small saucepan mix Cream and Dulce de leche. Bring pan over medium heat stirring ingredients to dissolve completely and until almost boil.
2. Pour hot mixture over over crushed chocolate. Let rest about 1 minute moving the bowl with your hands.
3. Start mixing gently with a spoon until chocolate melts completely. Add vanilla and mix gently.
4. Let the Ganache rest a couple of hours at room temperature or until a spreadable consistency.
5. Decorate cupcakes using a pastry bag adapted with a tip. I used Wilton 1M.
