Lavender Naked Cake for Mom and Floral Styling

Infusión de Leche de Lavanda
240 ml (1 taza) de leche entera
1 cucharada de lavanda seca de cocina
1. Agrega la lavanda a la leche y calienta hasta hervir. Reitra la mezcla de fuego y dejarla enfriar a temperatura ambiente. Cubrir y refrigerar una noche entera ( O al menos por algunas horas). Colar en un recipiente.

120 ml Infusión de leche de lavanda a temperatura ambiente
2 Claras de huevo
1 Huevo entero
142 g Harina de repostería, cernida dos veces
150 g Azúcar
1 + 1/4 cdta. de Polvo para hornear
1/2 cdta. sal
80 g Mantequilla
1. Precalentar el horno a 325°F. Engrasar y enharinar 2 moldes redondos de 12 cms.
2. En un recipiente mediano, mezcla las claras de huevo, el huevo entero y 2 cucharadas de la leche.
3. En el recipiente de una batidora eléctrica adaptada con el batidor plano, mezcla la harina, azúcar, polvo de hornear y la sal a velocidad baja, mezclar durante 30 segundos.
4. Añade la mantequilla y mezcla a baja velocidad durante unos 30 segundos, a continuación, añade la leche restante y bate a velocidad baja hasta humedecer la mezcla. Aumenta a velocidad media durante 1-1 / 2 minutos.
5. Raspa los lados del recipiente y empieza a agregar a la mezcla de huevo / leche en 3 partes; bate en medio durante 20 segundos después de cada adición.
6. Divide la masa en los dos moldes, extendiéndola uniformemente.
7. Hornea 30-35 minutos o hasta que el un palillo de madera salga limpio cuando sea insertado en el centro. Ten mucho cuidado de no honra de más.
8. Deja enfriar los moldes sobre rejillas durante 10 minutos antes de desmoldar. Invierte los moldes y deja enfriar los pasteles a temperatura ambiente sobre las rejillas.

Crema de Mantequilla de Chocolate Blanco y Lavanda
100 g Chocolate blanco que contenga manteca de cacao
50 g Mantequilla
70 g Claras de huevo (aproximadamente 2 claras de huevo, pero es importante pesarlas)
50 g Mantequilla
3 cucharadas de infusión de leche de lavanda a temperatura ambiente
1. Derrite el chocolate blanco y 50 g de mantequilla a baño maría, revolviendo constantemente hasta que la mezcla esté suave y cremosa. (No dejes que el fondo del recipiente toque el agua hirviendo)
2. Bate las claras de huevo ligeramente para romperlas, agregarlas en la mezcla de chocolate blanco derretido. Continua batiendo y calentando hasta que un termómetro de lectura instantánea registre 140ºF / 60ºC. La mezcla se habrá espesado un poco.
3. Retira del fuego, transfiere la mezcal a otro recipiente, cubre y refrigera durante unos 45 minutos.
4. En el recipiente de la batidora eléctrica con el batidor de globo, bate 50 g de mantequilla a velocidad media-baja hasta que quede cremosa.
5. Vierte poco a poco la mezcla de chocolate blanco, raspando los lados del tazón, según sea necesario, hasta que al levantar el batidor queden picos duros. Añade la leche de lavanda, una cucharada a la vez y continua batiendo hasta tener una mezcla homogénea.

Ensamblar y decorar el pastel
1. Si los pasteles tienen un domo en la parte superior, los debes nivelar usando un cuchillo de sierra o un nivelador de pasteles. (Es mejor usar los pasteles congelados). Corta cada pastel en 2 capas iguales y así obtendrás 4 pequeñas capas de pastel.
2. Pon la primera capa sobre una superficie plana y agrega la crema de mantequilla usando una manga pastelera adaptada con una boquilla de estrella (Yo usé la Wilton 8B). Repite el proceso.
3. Decora con más Ganache de chocolate y flores frescas.

Infused Lavender Milk
240 ml (1 cup) whole milk
1 tablespoon dried culinary lavender
1. Add the lavender to whole milk and heat until boil. Remove from heat and let it rest to cool temperature, cover and refrigerate overnight (or at least several hours). Strain into clean bowl/glass.

120 infused Lavender Milk at room temperature
2 egg whites
1 whole egg
142 g cake flour, sifted twice
150 g sugar
1 + 1/4 teaspoons baking powder
1/2 teaspoon salt
80 g unsalted butter
1. Preheat oven to 325°F. Grease and flour two round 5-inch pans.
2. In a medium bowl, combine and stir the egg whites, whole egg and 2 tablespoons of the milk. Set aside.
3. In the bowl of an electric mixer fitted with the paddle attachment, combine the flour, sugar, baking powder and salt together on low speed, stir for 30 seconds.
4. Add the butter and blend on low speed for about 30 seconds, then add remaining milk, and mix on low speed until just moistened. Increase to medium speed and mix for 1-1/2 minutes.
5. Scrape the sides of the bowl and begin to add the egg/milk mixture in 3 separate batches; beat on medium for 20 seconds after each addition.
6. Divide the batter in two, spreading it evenly.
7. Bake 30-35 minutes or until a cake tester comes clean when inserted into the center. Be so careful to not over-bake.
8. Let cool on racks for 10 minutes before loosening the sides with a small metal spatula, and invert onto greased wire racks. Gently turn cakes back up, so the tops are up and cool completely.

White Chocolate Lavender Buttercream
100 g White Chocolate containing cocoa butter
50 g butter
70 g egg whites (About 2 egg whites,but it’s important to measure them)
50 g butter
3 tablespoon of infused Lavender Milk at room temperature
1. In the top of a double boiler set over simmering water, melt the white chocolate and 50g butter, stirring often until smooth and creamy. (Don’t let the bottom of the container touch the water)
2. Whisk the egg whites lightly to break them up and then whisk them into the melted white chocolate mixture. Continue whisking and heating until an instant-read thermometer registers 140ºF/60ºC. The mixture will have thickened sightly.
3. Remove from the heat, transfer it to a bowl, cover and refrigerate for about 45 minutes.
4. In the bowl of a stand mixer fitted with the whisk beater, beat 50g of butter on medium-low speed until creamy.
5. Gradually pour in white chocolate mixture, scraping the sides of the bowl as needed, until stiff peaks form when the beater is raised. Add lavender milk, one tablespoon at time and continue whisking 1 more minute.

To Assemble and decorate Cake
1. If cakes are domed on top, even out with a knife or cake leveler (Frozen cakes work better here). Even out both cakes in two equal layers so you get 4 evenly layers.
2. Place the first layer on a cake board. Pipe buttercream over the first layer using a star tip ( I used Wilton 8b). Repeat the process.
3. Use fresh flowers for garnish.
